One-Pan Mediterranean Skillet

This recipe has become a staple in our household & finds its way onto our dinner menu almost weekly! Not only is it delicious & super simple to make, this one-pan recipe makes for a lot less dinner clean up & is great as leftovers.

Ingredients:
  • 1 lb ground turkey

  • 1 purple onion, chopped

  • 1 TB minced garlic

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 1/2 tsp dried oregano

  • 1 jar (8.5oz) julienne cut sun-dried tomatoes

  • 1 cup white rice

  • 2 cups chicken broth

  • 5oz spinach

  • 1 lemon, juiced

  • Feta cheese

  • Balsamic glaze

Directions:
  1. In a large skillet, drizzle olive oil in pan on medium-high heat. Cook ground turkey, onion, garlic, salt, pepper, and oregano until turkey is browned and onion is translucent.

  2. Add jar of sun-dried tomatoes, rice, and chicken broth to pan. Bring ingredients to a boil. Once boiling, cover and reduce heat to low. Cook until rice is tender - approx. 15 minutes.

  3. Stir in bag of spinach and lemon juice. Add more broth as needed. Cook until spinach is wilted.

  4. Top with feta cheese, a drizzle of balsamic glaze and serve. Enjoy!
